You guys know I’m all about quick and easy recipes, right? LOL! This one is SO easy…and TASTY! I think the hardest tasks for this recipe are chopping the onions and and peeling the potatoes. I haven’t prepared this in awhile. I think I need to make this again soon!
INGREDIENTS
- 1 16 oz. package smoked sausage, sliced
- 1 large onion, peeled and chopped
- 5 large potatoes, peeled and chopped into 1/2 inch cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 teaspoons paprika
- 1 teaspoon dried thyme
- 1 cup shredded cheddar cheese
DIRECTIONS
- Preheat oven to 400 degrees.
- Line a large baking tray with sides with foil and spray with cooking spray.
- Put the sausage slices, chopped onion, and potatoes into a large bowl. Drizzle with olive oil and season with salt, pepper, paprika and thyme. Toss together and pour onto the baking tray.
- Place into the preheated oven and roast for 45 minutes to an hour, stirring halfway through the cooking time, until the potatoes are golden brown and tender. Remove from the oven.
- Sprinkle the cheese over top and put back into the oven for a few minutes to melt the cheese.
