The kids are out of school. You don’t want them to have too much junk food. However, you want to prepare something that you know they’ll eat. These quesadillas are perfect! I made them one year for the Super Bowl, and the family loved them! We had mustard and ketchup on the side for dipping. Yum!
INGREDIENTS
- 1 lb. ground beef
- 2 tbsp. olive oil
- 1 medium yellow onion, chopped
- 2 tbsp. Worcestershire sauce
- 1/4 cup ketchup
- 1/4 cup real bacon bits, or chopped bacon
- Salt and pepper to taste
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 cups sharp Cheddar cheese, shredded
- 2 large soft flour tortillas
- Vegetable oil for brushing
- Crushed red pepper flakes
INSTRUCTIONS
- In a large skillet, heat the olive oil on medium high heat. Add the chopped onion and cook until translucent, about 5-7 minutes.
- Add the ground beef and and break it up with a wooden spoon or spatula. Cook the ground beef and onions until the beef is thoroughly cooked, about 10 minutes.
- Preheat oven to 350 degrees. Once the ground beef is cooked, add the Worcestershire sauce, ketchup, bacon bits, salt and pepper, garlic and onion powders and stir until mixed well. Allow to simmer on low heat for 5-7 minutes.
- Place the tortillas on a large baking sheet.
- Spoon half of the beef mixture on one half of the tortilla shells and spread it evenly.
- Sprinkle 1 cup of cheese on the beef mixture, and flip the other half of the tortilla on top.
- Repeat steps 5 & 6 with the second tortilla.
- Brush the tops of the tortillas with vegetable oil and sprinkle with crushed red pepper flakes.
- Bake for 10-15 minutes. Tortillas should be nice and crisp, and the cheese is bubbly. Let sit about 5 minutes to cool. Using a sharp knife or pizza cutter, cut into triangles. Recipe should yield 4 large triangles.
