When I cook (occasionally, LOL!), my goal is to get in and out of the kitchen as quickly as possible. However, I also want the food to taste good. I found this recipe several months ago. The combination of herbs and spices used for seasoning is really tasty! (I made some changes to the original recipe. The first time I prepared it, the chicken was a little bland.) I like it so much that this is how I always season chicken for baking now. Enjoy!
INGREDIENTS
- 6-7 bone-in, skin-on chicken thighs
- 4 large carrots, peeled and cut into large chunks
- 2 small to medium onions, cut into large chunks
- 1 lb. red potatoes, cut in halves
- 2-3 Tbsp. olive oil
- Dried oregano and thyme, to taste
- Garlic powder, to taste
- Salt, to taste
- Freshly ground pepper
INSTRUCTIONS
Preheat oven to 425F. Place the chicken, carrots, onions, and potatoes onto a rimmed cookie sheet. Drizzle on the olive oil and toss. Season with oregano, thyme, garlic powder, salt and pepper.* Roast for 25-28 min. or until chicken reads 165F (or done to your liking). Serve.
*For best results, toss the chicken and vegetables again after adding the seasoning. This will help to evenly distribute the seasoning.
